The allergen matrix lists every menu item against the allergen codes it contains, including allergens added by modifiers. Front of house uses it to answer a guest in seconds.

**Before you start:** recipes access. Allergen declarations are recorded per stock item under Safety and per menu item under Recipes.

## Read the matrix

1. Open **Recipes › Allergens**.
2. Rows are menu items; columns are the 14 allergen codes from the Malaysian declaration list.
3. A filled cell means the item contains that allergen, either from an ingredient or from a modifier.

## Answer a guest

1. Choose **Guest allergy filter** and tick the guest's allergens.
2. The matrix collapses to a safe-items list. Read it to the guest or show the screen.
3. Clear the filter afterwards.

> **Warning:** A menu item with no recipe cannot be checked. Those items show a critical banner and are excluded from the safe list. Do not assume they are safe.

## Keep it accurate

- Allergen truth starts at the stock item. Declare allergens when a new item enters the catalogue (**Safety › Allergens**).
- Modifier groups carry their own allergens, so a sauce swap changes the answer.
- Record a cross-contact event under **Safety › Allergens** when it happens, and clear it when the line is clean.
